Banana Cinnamon Rolls

Fluffy cinnamon rolls that are made with natural sweeteners such as bananas, dates, and apples

Ingredients

Dough

  • 2 ripe or overripe (225g) medium sized bananas, mashed
  • 2 tbsp honey, or maple syrup
  • 2 & 1/4 tsp active dry yeast, 1 packet
  • 2 & 1/2 cup (282g) all-purpose flour
  • 2 tsp cinnamon
  • 3/4 tsp salt
  • 1 tbsp baking powder
  • 2 tsp vanilla extract

Filling

  • 1 sweet apple, or unsweetened apple sauce
  • 1 & 1/2 tbsp cinnamon
  • 4 medjool dates

Icing

  • 1 cup Greek yogurt
  • 2 tbsp honey, or maple syrup

Method

Making the Rolls

  • 1)

    Combine the mashed bananas, honey, and vanilla extract in a medium sized bowl

  • 2)

    Combine the flour, baking powder, yeast, cinnamon, and salt in a large mixing bowl

  • 3)

    Pour the banana mixture into the flour mixture and combine with a spatula. Once you cannot combine it any further, transfer the dough onto a silpat or a lightly floured surface and begin kneading using your hands. Knead for at least 15 minutes.

  • 4)

    Place the dough into an oiled bowl and let rise in a warm place about 1 hour or until the dough has doubled in size

Making the Filling

  • 1)

    Using a blender or food processor, combine the apple, cinnamon and dates.

Adding the Filling to the Rolls

  • 1)

    Once the dough has doubled in size, place it onto a lightly floured surface or silpat and began rolling it into a 16″ x 12″ rectangle.

  • 2)

    Spread the filling mixture onto the rolled out dough

  • 3)

    Carefully using the long end, begin rolling from the long end all the way to the bottom

  • 4)

    Slice the log into 8 pieces. I find it best to use non-flavored floss for this.

  • 5)

    Place the slices into a well greased 9″ round baking pan. Cover and let rise for 30 minutes or until it has doubled in size.

  • 6)

    Preheat the oven to 350 degrees F.

  • 7)

    Once the dough has risen, place the baking pan into the oven and bake for 20 minutes until golden brown.

  • 8)

    Once the rolls are done, remove from the oven and let them sit in the pan for at least 5 minutes before transferring them to a cooling rack.

  • 9)

    Once cool, top the cinnamon rolls with the Greek yogurt icing and enjoy!

Making the icing

  • 1)

    Combine the Greek yogurt and honey

Notes

Store in the refrigerator. They can last up to 5 days in the fridge. Be sure to microwave them for at least 20 seconds after removing from the fridge and before eating.
