Chocolate Avocado Energy Bites

Chocolate and avocado is a brilliant idea! The creaminess from the avocado combined with the richness from the chocolate result in a super decadent yet healthy snack.

Inspiration for creating this recipe came from my dear friend and his amazing wife. She was making them one evening and shared the recipe with me. The recipe came from Natalie Jo’s recipe blog. As soon as I saw this recipe, I just had to try it. I couldn’t get over the ganache-like texture that resulted from this combination.

After making the recipe, I decided to make a few tweaks to it.

  1. I decided to use melted semi-sweet dark chocolate instead of cocoa powder. This helps the mixture stiffen better when refrigerated, allowing it to form better into balls.
  2. Omitted the vanilla extract. Since these balls do not get baked, the presence of vanilla extract overpowers the taste from the other ingredients.
  3. Addition of coconut oil. This helps the melted chocolate become thin so they are easier to shape into balls. I also love the added coconut flavor.

Chocolate Avocado Energy Bites

  • Prep time: 20 minutes
  • Total time: 6 hours 20 minutes
  • Serves: 12

A decadent and healthy snack that you can take where-ever you go.

Ingredients

  • 3 ripe avocados
  • 1/4 cup (60g) nut/seed butter
  • 3 tbsp (53.5g) maple syrup or honey
  • 1 cup (175g) bitter sweet chocolate, melted
  • 1/4 cup (31g) pistachios, chopped
  • 1/4 cup (20g) desiccated coconut shavings

Method

  • 1)
    Combine avocado, seed/nut butter, maple syrup/honey and melted chocolate into a food processor. Process until well combined.
  • 2)
    Transfer mixture into a container and store in the freezer for 2 hours
  • 3)
    While the mixture is freezing, prepare the coating. Chop or blend the pistachios and coconut shavings. Then pour onto rolling surface (which could be a tray or plate)
  • 4)
    Remove chocolate and avocado mixture from freezer. Mixture should be the consistency of ice cream. Scoop out the mixture and roll them into 12 balls.
  • 5)
    Coat each ball with the pistachio and coconut mixture
  • 6)
    Transfer onto plate and refrigerate for at least 4 hours

Notes

Store the balls in the refrigerator. They last up to five days refrigerated.
