Not “Key” Lime Pie but Lime Pie
For any of you who have juiced key limes before, you know what a pain it is. They’re small; they do not have a lot of juice in them, hence you have to juice a bunch before barely having enough to make a key lime pie. In addition, living in the northeast, key limes are also difficult to find. So there must be a way to make a similarly delicious pie, but with something easier to juice and readily available. Why not use limes? This question and the associated obstacles gave birth to the “lime pie” recipe.
What’s healthy about this recipe?
The obvious answer is, it contains limes! This article provides a good summary on the health benefits of limes.
Not to mention, they say you should eat several servings of fruit every day. So the great thing about eating this dessert is, it gets you closer to meeting your daily serving of fruit.
How is this recipe healthier from other key lime pie recipes?
More the than 50% reduction in sugar. For this recipe, I wanted to retain a key ingredient you will find in most key lime pie recipes, which is condensed milk. Condensed milk works really well in this pie recipe because it lends sweetness and structure to the pie. Although I did not eliminate this ingredient, I greatly reduced it because it contains a large amount of processed sugar. You will notice that most recipes will call for 2-3 cans of condensed milk, while my recipe only calls for one.
Addition of Greek yogurt. Most recipes either excludes the cream or has a completely separate layer of just heavy cream. I added in Greek yogurt and cream directly into the lime and condensed milk mixture. When adding citrus fruits, such as lime, which is very acidic, I like to neutralize the acidity with some fats. Greek yogurt and heavy cream works well to achieve this balance.

Lime Pie
- Prep time: 15 minutes
- Cook time: 22 minutes
- Total time: 37 minutes

Like Key Lime Pie but with limes, because who has the time and patience to squeeze key limes?
Ingredients
Graham Cracker Crust
- 1 & 1/2 cup graham crackers, about 15 crackers
- 6 tbsp butter, melted
Filling
- 14 oz sweetened condensed milk, 1 can
- 1/2 cup Greek yogurt
- 3/4 cup fresh squeezed lime juice
- 1 cup heavy cream
- 1 tsp vanilla extract
- zest from 2 regular limes
Method
Graham cracker crust
- 1)
Preheat oven to 375F.
- 2)
Mix graham cracker crumbs and butter in a small bowl. Press the crumb mixture into an 8″ – 9.5″ pie pan. Bake for 7 minutes.
Filling
- 1)
Preheat oven to 350F
- 2)
Whisk together all the ingredients for the filling in a medium bowl. Pour into prepared graham cracker crust and bake for 15 minutes.

Let pie cool slightly before chilling. Chill for at least 3 hours.
Notes
Store pie in the refrigerator for up to 5 days.
