Oatmeal Banana Brownies
Delicious and decadent brownies that are gluten free and made with all-natural sugars.
I have to admit that I’m not much of a chocolate lover, but I do get the occasional cravings for chocolate. I gave up drinking coffee years ago the more I began to listen to my body. Although coffee kept me alert, I never liked the jittery feeling it gave me. So now when I do need a hit of caffeine, I reach for some chocolate. And what’s better to satisfy your sweet tooth and fulfill your craving for chocolate than an indulgent brownie?
There are so many recipes out there claiming that theirs is the best brownie. When I embarked on this journey of creating a brownie recipe, my goal was not to create the best tasting brownie, but to create a healthy one that also tastes great. This brownie recipe is not as dense as the ones we all know and love, but still delicious and decadent.
How is this brownie recipe different?
What distinguishes this brownie recipe from others lies in the winning combination of bananas and chocolate. I’d say that they are a match made in heaven when it comes to taste. The bitterness from the dark chocolate pairs well with the sweetness from the banana. In addition, bananas are extremely healthy. They are high in antioxidants, vitamins, minerals and fiber. Since it provides natural sweetness and moisture to baked goods, it is the secret weapon when it comes to healthy baking.
The other ingredient that makes this so different from your typical brownie recipe, is the addition of oatmeal. Those who follow my blog know that I’m a bit obsessed with oatmeal. I love including them in my recipes where I can. Substituting flour for oatmeal gives this recipe a boost in nutritional value and the mild taste takes the backseat to the chocolate and banana. But the trade-off to using oatmeal is a slightly lighter, less dense brownie, which I do not mind.

Oatmeal Banana Brownies
- Prep time: 20 minutes
- Serves: 12
Ingredients
Dry Ingredients
- 3/4 cup oatmeal flour, (or 1 cup of rolled oats blended into flour)
- 1/4 cup unsweetened cocoa powder
- 1/4 tsp baking powder
- 1/4 tsp salt
Wet Ingredients
- 2 bananas, (mashed)
- 2 large eggs
- 1/4 cup Greek yogurt
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1 cup bittersweet chocolate chips
- 1 tbsp coconut oil
Instructions

Preheat oven to 350 degree F, and lightly grease an 8×8” pan and line the bottom with parchment paper

Sift all the dry ingredients together
- 3)
In a separate mixing bowl, combine all the wet ingredients, except for the coconut oil and melted chocolate
- 4)
Pour the wet ingredients into the dry mixture. Mixing until just combined (over-mixing will cause crumbly brownies.)

In a microwave or double boiler, melt the chocolate and coconut oil
- 6)
Fold in the melted chocolate and oil into the batter

Spread the mixture into the prepared pan and bake for 25-30 minutes. The edges will be slightly firm and the center will be soft.

Let cool for 20 minutes before cutting and serving
Notes
These brownies can be stored at room temperature for 2 days. If you prefer a firmer brownie, store them in the fridge for up to 7 days.
