Who has the time and patience to juice key limes? I certainly do not. In this recipe we will be using limes instead.

Lime Pie

Like Key Lime Pie but with limes, because who has the time and patience to squeeze key limes?

Ingredients

Graham Cracker Crust

  • 1 & 1/2 cup graham crackers, about 15 crackers
  • 6 tbsp butter, melted

Filling

  • 14 oz sweetened condensed milk, 1 can
  • 1/2 cup Greek yogurt
  • 3/4 cup fresh squeezed lime juice
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • zest from 2 regular limes

Method

Graham cracker crust

  • 1)

    Preheat oven to 375F.

  • 2)

    Mix graham cracker crumbs and butter in a small bowl. Press the crumb mixture into an 8″ – 9.5″ pie pan. Bake for 7 minutes.

Filling

  • 1)

    Preheat oven to 350F

  • 2)

    Whisk together all the ingredients for the filling in a medium bowl. Pour into prepared graham cracker crust and bake for 15 minutes.

  • 3)

    Let pie cool slightly before chilling. Chill for at least 3 hours.

Notes

Store pie in the refrigerator for up to 5 days.
