Strawberry Short Cake Energy Bites
Ever since I started becoming more health conscious, it became my mission to turn my favorite snacks into a healthier version. So my next mission was the Strawberry Short Cake ice cream bar by Good Humor.
I just love the heavenly combination of strawberries and cream. Unfortunately with most store bought treats, they are also filled with artificial flavors, corn syrup, food coloring and preservatives. Being set on enjoying these flavors without the unhealthy additives, I embarked on my mission to replicate this heavenly combination into a healthy energy ball.

Strawberry Short Cake Energy Bites
- Prep time: 20 minutes
- Total time: 3 hours 20 minutes
- Serves: 12
Grab a taste of strawberry short cake before your work-outs, after your workouts, or where-ever you go.
Ingredients
- 1/2 cup (100g) dehydrated strawberries, roughly chopped
- 1 cup (200g) oatmeal, in powder or ground
- 1/2 cup (100g) almond flour
- 5.5 tbsp (100g) Greek yogurt
- 2 tbsp (42.5g) maple syrup or honey
Instructions

Combine all ingredients into a mixing bowl

Using your hands, shape them into 12 balls
- 3)
Transfer onto plate and refrigerate for at least 3 hours
Notes
Store the balls in the refrigerator. They last up to five days refrigerated.
